USA - San Francisco Sourdough
The first time I encountered sourdough bread from San Francisco was in in 1994 when I used a sourdough brought back by a colleague from San Francisco. In 2015, I decided to visit the city to understand the popularity of its sourdough bread. Up until then, I thought San Francisco sourdough was known for its tangy and sour flavor. However, after tasting bread from the San Francisco Baking Institute, Semifreddies, Acme Bread, and Tartine Bakery, I realized there was more to it. The bread was indeed sour, but it also had complex, less tart, and lactic flavors, and was made from ancient grains. Next time you're at Fisherman's Wharf, don't just settle for one type of bread – explore the offerings of these excellent bakeries that go beyond imagination.
