In 2017, we collected 10 Turkish sourdoughs with Professor Ömer Şimşek of the university in Ankara. We definitely had to make a movie about some of these places. Discovering sourdough in Bursa, Pamukkale, Trabzon, and Gümüshane was incredible. I probably ate one of the best breads I have ever tasted in my life. It was baked in a wood-fired oven for 4 hours, resulting in roasted cereal and nutty flavors everywhere. I also had the opportunity to discover the "Girl Power" in a bakery operated only by women. Turkey has a long history of bread baking dating back to 8000 years or more. I was invited to discuss this bread and the library on "Masterchef Turkey" in 2022.
