The Fermenting Power Of Chickpeas

"Sometimes, a special event can inspire you to think. In our case, it led us to create the sourdough library. A baker in Lebanon asked us to preserve his recipe for the future in case his sons decide to use dried instant yeast if they take over the bakery. In the movie, we explain how to create "yeast water" from chickpea fermentation. I discovered two techniques for this in Crete and Turkey. Although this method cannot be called sourdough, it prompted us to consider creating a library to preserve all these techniques, stories, and biodiversity from different parts of the world. There are many unknown things happening during chickpea fermentation. In the past, people used to hide it from their neighbors; some even attributed it to the involvement of the devil due to the sulfuric smell it produces. Dimitris in Crete is truly unique. He explained the entire process, and I made a new friend for life. I also traveled to Turkey, where I met Gönül and Mahir, who showed me their method of fermenting chickpeas and turning them into delicious flatbread.
