Japan - Sakadane Sourdough
I have traveled to over 50 countries, many of them multiple times. Japan is one of my favorite countries. When Kimuraya Bakery decided to add its sourdough to the library collection, finding out how it was made was a no-brainer. Mainly because this sourdough, number 100, was the first one not made from flour. Instead, they use cooked rice. So, I wanted to find out why and how Mr. Kimura San, one of the last Samurai (No, not Tom Cruise...), decided to do this. This Sakandane sourdough is the only one in the library we feed monthly, whereas all the others have to wait two months. Enjoy watching my "Quest for Sourdough" in Japan.
