Italy - Altamura Sourdough

In 2013, Altamura was the first destination in the Quest for Sourdough series. At that time, I had no idea that I would be visiting unique places to discover all these different sourdough stories. In Altamura, we visited Nunzio, a fantastic baker with a lot of passion who showed me how to make the typical bread, which is one of the few in the world with the DOP label. I saw and discovered how durum wheat flour is obtained and learned about its benefits compared to soft wheat. Lastly, I visited my friend Marco Gobbetti at the University of Bari.
