Finland

This movie is set in Finland, where I visit Father Damaskinos, whom I met earlier at the Xenofontos monastery in Greece. He has two sourdough starters - one inherited from his ancestors and one brought from the monastery on Mount Athos. The inherited one is a rye sourdough dating back to the late 18th or early 19th century, while the other is a wheat sourdough blessed during the celebration of Stavros. You can find more about this story in my Quest for Sourdough movie on the Greek island. In this movie, we bake 100% rye bread using a century-old technique to build up the acidity in the dough for a lovely bake in the end. Father Damaskinos is a fascinating character.
