Canada - Sourdough Charlie
Thanks to our sourdough library project, we have discovered findings that would never occur in everyday research projects in a lab. Sourdough Charlie was collected during the COVID crisis. I couldn't go to Alberta, but we made this movie using our creativity. That aside, we discovered that this sourdough created by Jay contains a lactic acid bacteria, which can also be found in sourdough number 125 from Anita Šumer in Slovenia. A leuconostoc holzapfelii. Is that a coincidence? What if I tell you that the founding father of the Freson Bros. was born in Slovenia? I'm sure you are curious right now to find out more.
